Tuscan Panzanella

ingredients

3 slices of stale bread
2 tomatoes
1 clove garlic
extra virgin olive oil
basil
Origan
salt

Preparation

Cut the bread into pieces and moisten with water taking care not to soak it too much.
Then add the ripe tomatoes, cut into small pieces and seasoned with oil, salt, basil, oregano, garlic and if you like a little ‘of vinegar.

 

Panada Piedmont

ingredients

400 g of stale bread
150 cl of broth
1 knob of butter
12 onion
olive oil extra-virgin olive oil
Grana cheese

Preparation

Cut the bread into slices and place in a casserole dish (preferably earthenware) in which you fry the onion in the butter, pour a little ‘oil flush and the hot broth.
Let stand for half an hour, put the pot on low heat and cook slowly, stirring often an hour.
Add the grated cheese, stir and serve with a drizzle of raw oil.

 

Meatballs bread

ingredients

12 kg of stale bread
1 egg
50 g of grated cheese
& Frac12; scamorza
2 hot dogs
1 tablespoon pine nuts
1 clove garlic
bread crumbs
salt and pepper
extra virgin olive oil

Preparation

Remove the crust and cut the bread into cubes.
Soak the bread in water and wring well.
Diced smoked cheese and the sausage and add to the bread, add the egg, pine nuts, grated cheese, salt and pepper.
Stir well, formed a lot of balls and coat in bread crumbs.
In a pan heat a little ‘oil with the garlic and cook the patties on both sides for a few minutes.
If you prefer a more light cooking put the meatballs in an oiled baking pan and cook the meatballs in the oven preheated to 180 degrees for 20 minutes.

 

Souffle bread

ingredients

250 g of stale bread
12 liter of milk
100 g of grated Emmenthal
1 knob of butter
12 white onion
2 eggs
salt and pepper
marjoram
paprika

Preparation

Remove the crust, cut the bread into cubes and soak it with hot milk.
Cut the onion into very thin slices, soffriggetela in the butter and add the soaked and squeezed bread.
Separate the egg whites from the yolks of the eggs, the latter add the cheese and spices, mix well, then add to the mixture of bread and onions.
Mix thoroughly until the mixture is homogeneous.
Salted egg whites until stiff and furbish, and add them to the mixture, stirring very gently from the bottom up not to dismantle them.
